"Planned" Leftover Burritos

This is a "planned" leftover burrito because I usually have some sort of meat - roasted chicken, steak, fish, etc. - that I need to have a way to finish off, so I build it into my planning. You can substitute a rotisserie chicken or any other meat, use canned beans if you don't keep a pot of beans in the fridge as we do, leave the meat out entirely, or substitute brown rice to up the nutrition quotient.

Ingredients:
2 tbsp olive oil
1 lb leftover meat - here I use chicken I roasted yesterday
1/2 cup chopped or grated fresh onion
Taco Seasoning:
1/4 tbsp chili powder (for mild seasoning - increase if you like it hotter)
1 tsp garlic salt
1/2 tsp kosher salt
1/4 tsp onion powder
1/4 tsp crushed red pepper
1/4 tsp dried oregano
1/2 tsp paprika
1-1/2 tsp ground cumin
1/4 tsp ground black pepper

1 - 2 cups pre-cooked (or canned) beans
1 cup rice
Flour tortillas (or whole wheat, etc.)
Tomatoes, Avocados and other veggies as you like
1 cup grated cheese of choice - I used Colby Jack

1. Start water for rice while you measure spices for the taco seasoning and shred the chicken.
2. Heat skillet and add olive oil. Heat chicken until warmed through then cover in taco seasoning. In the meantime, you'll have started your rice.
3. Add 1/2 cup of water and bring to a boil, stirring to evenily coat the chicken. Remove chicken from skillet.
4. Add onion to pan until it begins to turn golden. Add beans and cook until warm.
5. Chop the tomato, avocado and any other vegetables you want to add, and grate the cheese.
6. Fill burrito with chicken, beans & rice, cheese & vegetables and toast in dry warm pan to seal. Add cheese and garnish with sour cream.

this looks delicious, can't wait to try them. we are at the local burrito store at least once a week, my son (5) loves burritos!

It sounds delish -- the adorably big-eyed gal in the last photo is certainly enjoying it -- but I'm going to pass on voting because I think the time estimate is pretty generous.

I rarely think of Mexican or Tex Mex cuisine as quick since chopping, slicing, and dicing a variety of fruits and veggies can eat up a lot of time. There's a reason it's called taco night -- it takes up your whole night to make it.

This has definitely inspired me to have burrito night sometime soon, but not on a night I need a quick recipe.

it seems like such common sense, but i really like the idea of filling the burritos and then toasting in a dry pan to seal/melt the cheese. usually when i do burritos we do a build-your-own kind of thing, which frequently results in a lukewarm-to-cold burrito that has to be nuked in the microwave (and a dreaded floppy/gummy tortilla as a result). i also never thought of adding water to leftover chicken with the spices to make it juicier (i assume that's the purpose? i lack kitchen common sense).

To address the time issue, I have to say that I deliberately plan these into the week's meals, so we are always using things that are leftover and pre-cooked. We timed it while we were making it, so the time is accurate. You could also have pre-made taco seasoning, either by making a larger batch of this recipe or buying packets. You can use canned beans, instant rice, and leftover vegetables for faster prep and cook times.

To be fair, you could start from scratch, make everything on the spot, and use brown rice and make a "night" out of this too. My husband doesn't cook much and even he can have this on the table by the time I walk in the door.

Oh, I almost forgot - I used the leftovers to make a sort of layered burrito pie that I threw in the freezer. It converted well : )

i disagree with akay--i think the time estimate sounds about right. but then again, knife skills (and knife quality) vary in every kitchen, and being a somewhat careful, slow, or just very precise chopper can add a few minutes. Even so, this still looks good and quick. good luck!

MMMMmmm this looks so good! I love easy dinner ideas that will please everyone! You must be an idiot if it takes you all night to make tacos. Chopping veggies takes maybe 5 mins and the whole point is people can make their own and have fun while doing it-- hence the name "taco night"

I buy beans in bulk and this is now on the menu for Saturday. great recipe!

Does the recipe really mean 1/4 tablespoon of chili powder (3/4 teaspoon)? It's just an odd way of expressing it so I wanted to be sure.
