The last few entries are still open for voting (see open entries here) and tomorrow we'll announce the winners! But we're curious: have you tried any of the contest recipes yet? Do you have any bookmarked?

 
 

We were instantly inspired by all the polenta dishes that showed up in this contest, and we also liked the abundance of egg dishes. Eggs, after all, are a great inexpensive source of protein, and it's not too costly to get really good pasture-raised eggs. So we loved this polenta with eggs and mushrooms; it seemed like a very "hobbit-y" sort of dish, and we have it bookmarked to try. We also liked these fast, cheap, yet delicious lentils with pasta.

What about you? What do you have bookmarked now, and is there anything you've already tried?

I've actually made three of the recipes in the last week (Roasted Potato Tacos with Creamy Dressing, Scrambled Eggs with Fresh Corn, Goat Cheese, and Oven-Roasted Tomatoes and the aforementioned Parmesan Polenta with Eggs and Roasted Mushrooms), all of which were quick, easy, inexpensive, and super delicious. I'd love to see this type of weeknight meal idea continued as a feature!

I've bookmarked a ton and even tried one, with a few modifications (the caper glazed pasta). It was great! I also got inspired by a frittata recipe and got my husband to make a fantastic frittata. Now that I am doing most of the cooking, after spending the first 10 years of my marriage cooking rarely, I need some great recipes to use. These are awesome! I especially love how quick they are, because I have two young kids who are hungry when they get home. This recipe contest has been a real lifesaver. I agree this would be a great feature to continue.

I made the polenta with roasted mushrooms last night, and it was lovely. I made the polenta with homemade vegetable stock, and added some sauteed spinach as well.

ive bookmarked a few

im going to make the potato tacos tonight, and have plans to try the spinach pie quesadillas, Paul's Uova In Purgatorio, and the stuffed jalapeno chicken bacon thingies.

I made the Uova in Purgatorio. I'd done something similar, but finished it in the oven, so the all-stovetop method was new, simpler, and delicious. Will definitely be making again.

We tried the egg-mushroom-polenta last week. While it tasted very good, I felt it needed something of a different texture. Everything in it is so mushy.

Also made the cool & spicy pork tacos w/ avocado sauce - delicious! Definitely making it into our regular rotation. My only comment with this dish...I don't know that I'd categorize it as "simple" to prepare. It took two pans, a food processor, several rounds of chopping, etc. etc. None of these things are bad, it's just that when I think of "quick and simple" meal prep it usually only involves one pan.

I made the avocado and spaghetti squash recipe, topped with truffle oil and a fried egg. It was ridiculously, retardedly good and certainly a new last-minute cooking staple....

I made Olga's Orzo with Summer Vegetables and Bacon. It was wonderful and my husband LOVED it. He's been asking for it again ever since.

I'd have to say I have a very large number of others' recipes bookmarked and will definitely be trying many of them in the near future. This is/was a great contest!

I tried Jean's roasted vegetables and creamy polenta recipe last night, and it turned out quite tasty. I did use the dairy products rather than the non-dairy substitutes, but I am sure it is great either way.

We also tried the Laura's toasted walnut ravioli a couple weeks ago and it was so quick, easy and tasty.

I've now got a queue of quick weeknight recipes! I'm eager to try the Sara's squash boats and Kathleen's chicken tinga tostadas (I used to make something similar, but have lost my recipe). I'm also really excited to try some of the vegetarian recipes; I am working to incorporate more vegetarian entrees into our diet.

I made Heather's Ribbons with Eggplant, Tomato and Blue Cheese last night..........sooooooo good! It was super easy too, i started making it right about when the Simpsons started and finished just after it was over. IT was delicious and tasted elegant and more expensive than it really was. The blue cheese and chili flakes really gave it a good kick with a nice, different taste. It wasn't heavy, and even my boyfriend (who hates blue cheese) loved it! yummy delicious. It's definitely going in the recipe box. Thanks Heather! :)

Hey, it's my lentils! Yay!

I'm dying to try the Uova in Purgatorio, as well as the poached eggs over yogurt (name escapes me right now). I eat eggs quite often for dinner, and those both sound fantastic.

I am not usually much of an egg eater (lack of imagination?), but I am inspired by all of the egg recipes as well. I have had Paul's Uova in Purgatorio twice already. Love how quick, easy, and hearty it is!

I’ve made Taylor's delicious Roasted Potato Tacos with Creamy Dressing, and Beth’s yummy Lentils w/ Ditalini.

I have bookmarked all of the vegetarian recipes and am anxious to try Cara's Spinach-Pie Quesadillas, Jessie's Prosciutto and Basil Wrapped Chicken Fingers for my SO (I know that thehungrymouse ROCKS), Katherine's Quick Curry Tomatoes, Kasia's Parmesan Polenta with Eggs & Roasted Mushrooms & Annie's Caper Glazed Pasta with Ricotta and Pepper... mmmm may be even right now.

Great feature – I especially love all the sharing

I made Phoebe's Scallops with Tomatillo Guacamole & Corn Salsa a couple of weekends ago. They. Were. Amazing. I was in heaven. Made me so sad that scallops don't make good leftovers and that we'd only made enough for a single meal. The guacamole and corn salsa paired perfectly with the scallops. Super quick and easy, beautiful to look at, and one of the tastiest recipes I've made in a long time!

I loved the sundried tomato pasta, and I now use that method - thickening milk into a sauce by simmering it about 10 minutes - with a bunch of different vegetables, including winter squash flavored with nutmeg and parm. Am thinking of making it with broccoli puree tonight.
