Why is it a favorite meal? Why is it a favorite? It takes a small amount of meat — lots of veggies — and has a surprising taste — sweet and savory!

 
 

Savory Greek Squash Boats
Serves 6-8 people

2 large(or 4 medium) yellow or zucchini, cut lengthwise and hollowed out
1/4 cup of olive oil
1 medium onion, chopped
1 lb. ground lamb
3 red, green or yellow peppers, chopped
1/2 cup of chopped walnuts
1/2 cup of raisins(golden or regular)
1 1/4 tsp. ground cinnamon
1 tsp salt
1 tsp ground black pepper

Place squash boats in a microwaveable 13x9 inch dish; add 2 tsp water and microwave on high for 4 minutes. Set aside.

Preheat oven to 375 degrees. Heat oil in a saute pan; add onions and peppers and lamb. Cook until lamb is no longer pink; drain off excess fat.

Add salt, pepper, cinnamon, raisin and walnuts to the meat mixture. Heat thoroughly, 3-5 minutes. Spoon meat mixture into and around squash boats.Cover with foil; cook for 30 minutes. Remove from oven; sprinkle with feta cheese. Serve with orzo mixed with chopped parsley and a bit of olive oil.
