Name: Salmon with Capers and Wilted Greens
Why is it a favorite meal? This recipe is incredibly fast and equally delicious. I have prepared this for many, and people are always shocked with the ease of preparation. This salmon is particularly great for a weeknight because it uses one dish and is ready within 20 minutes.

 
 

Salmon with Capers and Wilted Greens

Ingredients

4 (6-ounce) salmon fillets
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 tablespoons extra-virgin olive oil, plus more for coating
1/4 cup mayonnaise
4 teaspoons capers (more to your liking)
3 cups spinach, kale, or green of your choice
4 lemon wedges for garnish

Directions:

Preheat oven to 400 degrees F.

Coat a large baking dish with olive oil. Place greens in baking dish and drizzle with 2 tablespoons of olive oil.

Evenly place salmon on top of greens and season fillets and greens with salt and pepper. Generously brush mayonnaise on tops of salmon and dot with capers.

Bake 15 minutes, until fish is fork tender and greens are tender. Remove from oven and allow to sit for 2 minutes before serving.

Serve with lemon wedges and crusty bread, if desired.

Serves 4.

Great recipe--I'll bet creme fraiche would work too, instead of mayo. I tried to give a thumbs up and it wasn't working?

I will definitely make this - and try with other fish fillets. My fast fish recipes are usually poaching or stir fry.
