I discovered this jar in the back of my pantry, and on an evening when my dinner options were sparse. Cracking open the jar, these giant (they really are huge!) beans didn’t seem like much. But when heated up with couscous and a dusting of freshly grated Parmesan cheese, I was surprised at the meal that resulted!

At first glance, the beans seemed rather oily, but the tomatoes and chunks of spices kept my hopes up. I then drained a few, microwaved them until heated and wow, the flavors melded together well and the beans were tender and full of savory flavor. These beans were great as a light vegetarian dinner, but would work well as an appetizer on their own, or crushed and spread over toasted bread.

They have a Greek flavor and are a great secret to store away in the cupboard for cold nights. And they’re preservative free!

Have you tried TJ’s giant white beans?
