Recipe: Spaghetti Carbonara with Spinach

Spaghetti Carbonara with Spinach
serves 4

Whisk eggs in a bowl. Add Parmesan cheese, and black pepper; set aside.

Cook spaghetti in a large pot of boiling salted water until almost tender but still firm to bite, stirring occasionally. Add spinach; cook a few seconds longer then drain, reserving 1/4 cup cooking liquid. Whisk hot cooking liquid into egg mixture. Add pasta; toss to coat.

Add mixture to skillet with pancetta and toss, adding more cooking liquid by tablespoonfuls if dry.

This recipe isn't very well written... where are the measurements? We make a pretty good carbonara at my place...

2 egg yolks, 1/2 cup parmesan, black pepper mixed together. Boil 8oz spaghetti or angel hair and drain. Add egg mixture. Then we add a handful of Hormel Real crumbled bacon (but you can always add more) and 1/4 cup of heavy cream (more if you use a finer pasta like angel hair). Our carbonara comes out coated, but not like a sauce, and is quite delicious, and a really fast meal... even if its not the most authentic :)
