When we talk about outfitting a new kitchen, we generally advise you to keep it simple. Don't buy more than you really need: find pans and tools that will do double and even triple-duty. Don't buy more than one of any given kitchen tool.
But then there are those tools we just need to have more than one of. For me, this is cutting boards, as you can see above. What is it for you?
My cutting board habit has to do with their versatility and also with the way I cook. I am forever chopping this and that, and if I use one board for raw meat I don't want to contaminate the raw broccoli salad with beef juice!
Also, cutting boards (especially that long cheese board) are just great for serving all kinds of nibbles. I have less platters and more cutting boards; I love to serve cheese and crackers, nuts, fruit, and other bites on a big slab of wood.
So, at last count, I have at least eight cutting boards. Fortunately they store away easily; they slide into a funny narrow cupboard next to the stove. (My cake plate addiction is another problem entirely.)

Serving dishes...I just love their look, different shapes or seize but they look so good all in white!
...they do take a lot of precious space... but I'm willing to sacrifice!

I'm with you on the cutting boards. Many of them. Often wish I had more measuring spoons and cups too.
Many, many wooden spoons, and lately, I've been wishing for more than one silicone whisk (for use in enameled cookware--did I mention I have 3 sizes of heavy enameled pots?)
We keep more spoons than any other silverware around, we go through them like crazy.

I could have an entire utensil holder full of silicone scrapers/spatulas and I would still want more. The colors are great in my kitchen, and I use them for EVERYTHING.

Cookie sheets - 7 at last count. I tend to be a baking equipment hoarder in general, though - like 4 round cake pans, 2 square, and then 4 novelty shapes (bundt, castle, etc.). I definitely agree about measuring cups and spoons - I probably have 4 sets of cups and 3 of spoons. And then I have a few silicone spatulas but this post makes me want to get a few more... I think what I'm really saying is that I have a problem. :)

The cutting boards are great. I have a crappy plastic set that is color coded to avoid cross contamination. I also have a really nice wood one that I use as extra space next to the stove. I have wire shelves next to the stove and no other usable prep area. The cutting board provides a solid place to put my spices, oils im cooking it, my drink etc. Need to get at least 1 more for the shelf below it.

I third the cutting boards. I have four and feel that I need a few more.
I certainly wish we had more measuring spoons and cups. My husband is gluten-free so we bake a ton. We're always having to pull spoons and cups out of the dishwasher to hand wash them so we can use them.

I have about 6 cutting boards, i love to use them as prep spaces especially the large ones even if im not actually cutting something. I find it a lot easier to bring it over to the sink and wash it off than wipe off the counters (which to me seems more like im spreading the mess and germs around than actually cleaning it up). Also the mid-sized ones pop right in the dishwasher so even better. Storing them is not a big
I have found its essential for me to have 2 nice skillet/pan saucepans, because I use them so often. Sometimes I even need both at once.
I do have two sets of measuring cups and a bunch of incomplete sets/assorted measuring spoons. I have found even with making one dish I often find myself needing the 2 sets, ill usually reserve one for wet and one for dry ingredients.

Cutting boards and mixing bowls! I have all sorts of vintage mixing bowls that I love for their look, but they're also pretty functional. They do take up quite a bit of space though ...
On the smaller scale, I have many wooden spoons and spatulas, and 2 sets of measuring cups.

Er, a freezer? Seriously, our stand alone freezer is awesome. We house it on the patio of our apartment. It makes life much easier.
Kitchenaid mixing bowls and beaters. They make the holidays a 1000 times easier.
Silpats - makes baking and freezer so much easier.

Multiple cutting boards, lots of knives, two sets of measuring cups, spatulas, wood spoons, tongs, bottle openers (I don't know this happened... I only need 1!), probably about 10 mixing bowls.
I don't bake that much, but I have plenty of baking sheets, 2 muffin tins, a bread tin, glass baking dishes...

Mixing bowls, measuring cups & spoons, spatulas, wooden spoons, cutting boards, and sauce pans. The big one though is chef's knives I use them for cutting up so many things that if I didn't have multiple I'd be washing them all the time (also just easier to use one on meat and one on everything else when making a meal to prevent cross contamination).
