anyone have any experience with frozen tuna steaks? my schedule is unpredictable enough to make leaving fresh fish in my fridge an unhappy prospect, so i'm wondering if frozen could be a decent weeknight alternative...
last night i made eggplant parmesan (as you'll see on AT:NY i have a new oven - FINALY) from simply recipes, and it was WONDERFUL! you guys should try it!http://www.elise.com/recipes/archives/000220eggplant_parmesan.php
oh and i halved the recipe, used italian breadcrumbs, and actually came up a little short on mozarella and on the basil, and it was STILL fantastic!!
I don't buy much fish because we catch our own (salmon, steelhead). When I do buy it, I *always* opt for frozen, because it's actually fresher than non-frozen fish. Unless, of course, you live near where the boats dock.
I eat frozen salmon and it is pretty nice - especially for a weeknight.

having just completed a temporary (two months in one place before moving to yet another state), I've realized just how few of my kitchen gadgets I actually need to unpack. Food processor, two saute pans, two saucepans, cocktail shaker, a handful of knives, 1 large serving spoon, and wooden spatula- it seems like the other things can just stay packed without any trouble. Granted, summer doesn't exactly require crockpot stews or big roasts, but it's nice to know that I can cook with much less for kitchen toys.

well, i defrosted one of the tuna steaks tonight, and marinated it in soy sauce, rose's lime juice, and garlic. then i grilled it up and it was pretty good! not the most sublime tuna i've ever had, but it'll be a good new addition to my weeknight routine.
as a side, i realized all i had was some frozen sweet potato fries, so i seasoned them up with some coriander, red pepper, and powdered ginger. pretty good!
Tuna steaks are fine frozen, best if they are flash frozen. You can sear them with rock salt and pepper or eat them raw as sashimi, if it is good and not too fatty. Defrosts really nicely. Great with salad or hot sushi rice and furikake (dried seaweed mix)

Can any of you help me out with my first grown up dinner party? I'm having trouble deciding on a main course. Ideally, I'd like it to be something summery, i.e., light feeling and using seasonal herbs/veg/fruit, but also substantial. I was thinking of either fish or lamb. Any recipe suggestions?

Tuna steaks are fine frozen, best if they are flash frozen. You can sear them with rock salt and pepper or eat them raw as sashimi, if it is good and not too fatty. Defrosts really nicely. Great with salad or hot sushi rice and furikake (dried seaweed mix)
