I bought some purple long beans over the weekend. I only know that sautee them because that's what my mom used to make. What else can I do with it?

If "purple long beans" is not specific enough, please check out the picture I took before I cooked them last night. Thanks!

Physical help would of been great last... I made 3 batches of cookies for a thing at work. Chocolate Chip, Chocolate Cookie with White Chocolate Chips, and Iced Sugar Cookies in the shapes of pumpkins & ghosts.

I'm making SOMETHING to take camping this weekend. Granola? NY Times cookies? I don't know...

I'm having 3 people over for debate watching, dinner, and bingo tomorrow and I need some ideas about what to make, that will be fast and easy enough to take care of after work. I plan on shopping tonight. Any ideas? :)

I have lots in my fridge to cook: eggplant, zucchini, kale, potatoes, peppers, tomatoes - and no time to cook! I'm hoping to making the kale and potato gratin that was featured her a couple days/week ago. Just not sure when...

Debate bingo!!! What a great idea.

I always tend towards the Crock-Pot in these situations. Throw a pork roast in tomorrow morning with a splash of white wine, chilies, star anise, salt and some pepper. Leave on low all day. Come home, shred it, and serve with warm tortillas, guac, salsa, and some veggies.

Maybe an apple crisp for dessert? You can slice up the apples and toss them with lemon juice and brown sugar and put a crumble topping on ahead of time. Bake during dinner and tada.

Haha, thanks Faith! Wonderful idea, I do love a slow cooked pork anything! I've tracked down a crock pot (don't have the room, or maybe I can make the room if this turns out well!) and will report back on how it goes. We might incorporate some of the apples I picked last weekend into the mix. The crisp sounds yummy, but that was the first thing I made on Saturday and we just finished the leftovers. I can probably come up with something equally simple though, in that same vein.

Thanks again!

So the pulled pork was amazing, and totally easy. I am really leaning towards buying my own crockpot. Oh, and it was cheap! 4 lbs of meat for $7.50! We rubbed it with some random seasonings the night before, then plopped it into the crockpot in the morning w/ about 2 cups of watered down frontera spicy salsa and a few garlic cloves. 8 hrs later (using low heat), I had tender pork that barely needed any help shredding itself. Yum! I strained the liquid, threw it back into the crock pot w/ the shredded meat on warm and it was perfect when we ate after the debate (and a few "bingos"!).
