Hi, reggiesoang! One characteristic of chewy cookies are that they're high in liquid and sugar, but lower in fat when compared to other recipes. They also tend to have more eggs. If you're working with a pre-existing recipe, try fiddling with the proportions of these ingredients. You can also try mixing by hand, which makes for a denser (and hence chewier) cookie. Check out this post:
I just made these, and the little bit of peanut butter added little p.b. flavor, but made the cookies soft and chewy. We really like them!
