Pork fajitas or tacos (leftover from a pork shoulder my husband smoked for yesterday's holiday); spinach and strawberry salad, sauteed zucchini and a spanish omelette-not necessarily in that order nor on the same day. All veggies and eggs from our weekly farmer's market trip on Sunday. What I WISH I was eating was another piece of cherry pie that my husband made-I'll have to wait for next week's trip to stock up on the cherries again.

Hey, I've made that mediterranean orzo salad as well as the peanut noodles recently - they're both great recipes! The orzo salad travels really well... it would be good for a picnic.

A lot of things that are fast to cook because of the amount of chores I need to do this week. I made cold pea salad and a marinated vegetable salad that will serve as side dishes for a number of different meals. We'll probably have turkey burgers one night, bratwurst another, and grilled boneless chicken breasts marinated in lemon juice with rosemary.

leftover frogmore stew from monday's last hurrah. trying to finish it up, because this afternoon i get my very first CSA box. (beyond excited!)
(Mostly) vegetarian this week. Pizza margherita with awesome dough that I made a few days ago and refrigerated, felafel (also homemade) with whole wheat pita (they didn't turn out very good), veggie burgers made with bulgur, beans and panko, and chicken stew with potatoes and kale. Water to drink, sticking with the healthy theme....

Hubby's gone on business this week so I'm on my own.
-Made a big pot of red lentil dal, with plenty of tumeric and cumin and fresh carrots.
-Lots of blueberries with plain yogurt and a shot of maple syrup.
-Indulged in fish tacos from the local mariscos truck one night, with all the fixins and some white wine. YEAH!

Grilled pizza tomorrow night -- going to try to make my own dough this time rather than using Trader Joe's refrigerated dough. The Washington Post devoted its Food Section to grilled pizza this week, so I am inspired.
Maybe ravioli tonight? I have some won ton wrappers I need to use up, and "ricotta" which is actually a tofu olive oil mixture, pureed with carrots and asparagus, which is essentially indistinguishable from ricotta (but non-dairy and low-fat!). Have some homemade tomato sauce that can go on top.
Also have some Rancho Gordo beans I made over the weekend, so I need to find some creative way to use the rest of those!

Not sure why, but lately I've been addicted to Bailey's with peppermint schnapps over crushed ice with a sprig of mint. Soooooo delicious...
Made a batch of the banana, walnut and chocolate chunk cookies from the Martha Stewart Cookies cookbook last night. They were very tasty although next time, I will add another ripe banana to capitalize on the banana flavor as I didn't think one did the recipe justice.

Pasta with corn, roasted red peppers, fire-roasted tomatoes, chives, and smoked mozzarella
Asparagus soup infused with lemon thyme (admittedly a tad strange)
Black beans and rice with side of beet greens, transforming leftover beans and rice into black bean burgers, spinach and herb pizza with awesome homemade dough (recipe from Mark Bittman's "How To Cook Everything Vegetarian"), maybe some grilled chicken later and a lamb stew for the weekend depending on the vegetables available at the farmer's market on Saturday. My husband also wants to try making mozzarella at home this weekend as well as yogurt. We always bake our own bread and make granola on the weekend too. (My husband works and I work from home so we have a lot of time for this type of thing.)
As far as the cocktails go...most likely some nice white wine and possibly gin and tonic if friends come over.

Wednesday's health supper was pan roasted chicken breast in a lemon/mustard vinaigrette, over a green salad with juliened carrot, bean sprouts and micro-thin cucumber and radish slices (t.g. for a benriner). We had a simple pastina salad with shaved asparagus on the side. Jack and Ginger cocktails and dense, sticky coconut cupcakes for dessert.

i spent last weekend super sick with stomach flu. i somewhat have my appetite back, but feel very picky about what i want to eat. food and cooking in general isn't where my mind wants to be right now. meat isn't very appealing, so i'm exploring more vegetarian meals. tonight i grilled my first portobella mushroom! hopefully next week i'll be back to drooling over cookbooks...
