Tonight I'm making the dill chicken salad recipe I found on this site.

I'll probably do the corned-beef and cabbage thing on Sunday, instead of Monday. I plan to roast some rootveggies with it too, if I can find some parsnips.

I'm actually looking for some snack ideas! I'm heading to Seattle tomorrow morning and we need to pack a few items for the car so we aren't constantly stopping. Any ideas?

I tried that Southwest Skillet Ragu last night, YUM! It made a lot though, so we may be finishing it off tonight. Otherwise, I have chicken quarters to fix somehow.
CWillows: we go on cross country car rides quite often, I like to bring some items too. Usually we have rice cakes and some trail mix divided into individual containers. This usually helps with stopping too much, but with 2 kids and a dog, we have to stop anyway! Have a safe trip!

I'm having eggs florentine for dinner tonight. Maybe some hash browns with it. I plan on making some tortilla soup for dinner either tomorrow or Sunday night, depending upon how lazy my Saturday turns out to be. (Tortilla soup is really just an excuse to eat avocado and queso fresco together in a meal.)

We're having sushi tonight, but I made chicken piccata last night to make up for the dreadful piccata on Top Chef this week....hehehe! I'll probably bake something this weekend, not sure what?

I'll be trying out a few recipes from the March issue of Everyday Food, the 'couscous with carrot and cilantro' and 'watercress and cucumber salad' to enjoy (hopefully) with our grilled lamb tonight. This 50th issue looks really good!

gah -- I'm having people over for my husband's dinner birthday. i'm making

white bean puree and flatbread
risotto with roasted asparagus, fresh asparagus and smoked mozzarella
arugula and pomegranate seed salad
lychee and rosewater sorbet
meyer lemon and key lime tart
homemade quince ratafia

which is why i'm up with insomnia worrying about getting it all done!

CWillows-- You are probably already gone, but I think for car trips, the easier a snack is the better. I bring apples, carrots, sometimes grapes, and the old standby trail mix.

Today, my husband is cooking corned beef and roasted veggies, so we'll probably be eating that all weekend.

The Everyday Food recipes I tried last night were, indeed, very quick to prepare, tasty and worked well with our grilled lamb. Double yum for the 'watercress and cucumber salad'.
