I am moving across the country to LA this weekend......
My stuff is coming later, so the only cooking items I am packing for now are my Le Crueset Dutch oven/stock pot with lid, and favorite silicone spatch.
What kinda one-pot meal ideas for a single gal do yallz have?

Tonight my husband and I are splitting a gorgeous grass-fed ribeye, with my spicy red onion rings and wedges of butterhead lettuce with homemade buttermilk blue cheese dressing.
We have no plans for Saturday yet, though we'll probably just do something low-key.
Then Sunday is all about duck. We have a whole duck plus two extra legs in the fridge which my husband is going to take apart. He's going to confit the legs, then I'll take the carcass and wings and make stock, which will then go into a duck and sausage gumbo. We're reserving the breasts for stovetop smoking later in the week.

Tonight is winter squash (not sure what it is, sort of a cross between acorn and butternut but really small, from our CSA) stuffed with wild rice and cranberries; probably some roasted turnips or maybe turnip soup.
The rest of the weekend I'm not sure about. This is the final weekend of our CSA. I'm sure it will bring some greens and root veggies, maybe more green tomatoes.
Bx--hmmm, I am really into soup right now but it's chilly and rainy here so that works.

BX, I recently discovered the utter joy of Coq a la Biere, it's like Coq au Vin, but quicker and less annoying, and it's made with beer (who doesn't love beer?!) and it's a delicious one pot meal when paired with a nice, crusty baguette. Good luck with the move!
This weekend I'm on my own and looking forward to a big bowl of pasta made from dried tomatoes from my mom's garden.

I made coriander seed & english cheddar scones for breakfast on sunday. Took all of 20min and were really yummy.
Then for lunch we had Southern Indian Pumpkin curry with Basmati and I made a quick pumpkin pie with garam masala (can you tell we had lots of pumpkin in the house!).
