Peppadew peppers stuffed with goat cheese are one of my favorite super-fast, no-cook appetizers. I love to serve them to guests and introduce some of them to the sweet piquante peppers. But they're also the perfect indulgent and slightly exotic snack for a little party for one.
As far as I'm concerned, the sweet, crisp and slightly spicy South African peppers combined with tangy, creamy goat cheese form the perfect bite.
If I'm having a bad day, it's a great little pick-me-up. Or, if I'm watching my calories and planning a really healthy dinner, I can make myself one or two of these and have a little indulgent treat while I'm cooking without overdoing it. When I have an evening to myself at home, I might add a little baguette, a glass of wine and whatever else I have on hand for a nice dinner of little bites.
I'll admit, part of what makes this snack appealing to me is the fact that I can pick up the two ingredients at a great little gourmet food shop just steps from my apartment. So, it's always an accessible and reliable treat.

TAmom - I've also seen them in a refrigerated case and in jars. The orange ones in the top photo were something new the last time I visited my local shop. They're a little sweeter than the red ones.

I stuff my Peppadews with a soft flavored cheese, like herb & garlic boursin, cut with an equal part of whipped cream cheese; or use each layer of a tri-color torte separately to get 3 flavors of stuffing. I warm the cheese mixture for a few seconds in the microwave & pipe it through a plastic zip top bag with a corner cut off to fill a large number quickly. Guests love them!

At Trader Joe's they sell them in jars. I made some last week stuffed with ham and provolone cheese for lunch. Very delicious!
