Kitchn Cure: Week Four! Checking In... Still With Us?

kitchn-cure-4pt5.gifWeek Four for all you Cure Takers is in full swing. You should be up to your ears in roasting and soup-making. Carnivores and those identifying as Meat-Curious were asked to roast a chicken then make stock from the carcass. The vegetarians and those identifying as Veg-Curious should be roasting veggies then puréeing them into a soup.

How is it going? Did you get a chance to cook yet? I noticed there aren't pictures in the Kitchn Cure Flickr pool - did you eat your chicken before you photographed it?!

I know that taking and uploading your photos can seem like a chore, but if you're set up to do it (camera with charged batteries in the kitchen, computer and camera cord connected to one another) it isn't that hard.

Maybe you're blogging this adventure and don't upload to Flickr in addition to writing your blog post. We have our Google alerts on, so we should be catching any mentions, but just to be sure all the Cure-takers know where your saga is being chronicled, leave your blog address in the comments below.

I got a little sidetracked from The Kitchn Cure when we decided to install a pantry in our kitchen. That took precedence two weekends in a row.... And of course, there are only two weeks left of the semester (graduate school) and there are papers to write and tests to study for.

I don't think I can convince my husband to roast the chicken, so it'll have to wait, until who knows when, because this weekend we're out of town for a wedding. Such is the way of life, no? But, we love our new pantry! The pictures should be showing up in Chicago's Kitchn Cure on Flickr, but if they're not, they're in my Flickr stream....

i roasted the chicken on sunday, but didn't get a chance to post the photos until last night. i plan on making the stock tonight.

i actually love this assignment - i've always wanted to do the zuni roast chicken, but i've been afraid to do it in my small oven, and this was just the incentive i needed to bite the bullet and just do it.

incidentally, i decided to look for the original recipe, because i also wanted to make the zuni bread salad. i found it here.

I had way too many carrots, so I roasted them. I am not the world's biggest fan of carrots, roasted or otherwise. But there was that extra bag, so... I stirred them into my daughter's pasta w/tomato sauce and sent it with her for lunch today. We shall see if they got eaten.

I've got a broccoflower (or however you spell it) that seems to be a candidate for roasting. That might be good with pasta, too. I love soup, but somehow I can't bring myself to make a roasted carrot or broccoflower soup. I'm just not feeling soupish.

I'm hoping to get to the roasted veggies/soup by the end of this week. We've had company constantly and I haven't had any time to spend in the kitchen. I'm still working on cleaning out cupboards and organizing, along with starting to COOK. Hopefully I can catch up by next week!

I did all my cooking on Sunday. We're basically a vegetarian household... the sweet potatoes were fabulous! I'll keep that recipe in my repertoire. The stock was great too although I have a question... I made quite a bit... I'd like to freeze some for later. Do I dare freeze in glass? (We're cutting back on our plastic use.)

I have to admit I've been slacking, I had an event all weekend so wasn't really able to cook and this week so far has been too busy :( I think I'm going to roast some veggies because I don't have time to go get a yummy chicken and don't feel like getting a normal grocery store one. So I think sweet potatoes it is! Hopefully before the end of the week...

Did the Zuni chicken and bread salad tonight with teeny variations (added apricots to salad, etc.). It was more time-consuming than typical roast chicken, with all the flipping, but it came out very good. I attribute that more to the 2.5-day salting, though.

But the lousy thing is that I think I blew out the whole cooker during the process. I was taking the chicken out for the final flip and heard a pop. I thought it was maybe air from under the skin, but then I realized, as I tried to deglaze the pan and finish some braised carrots on the cooktop, that nothing was working anymore: not the oven, nor any of the burners. Bummer.

I roast a chicken every 10 days or so- I use one of those upright roasters (sort of like beer can chicken- but without the beercan) and it's easy and fast. So this wasn't a big deal for me. I took a picture of the bird, but my husband erased it (thinking it was a joke-why would I take a picture of our dinner???) and I didn't find out until we had eaten it!

Still here, but timing was just bad. I had just made a big pot of soup and a pasta casserole when the assignment was announced. I don't have room to freeze enough of either the previous stuff or this, so we've been trying to eat it all up this week. I was hoping to do this tonight (and so just barely managing to do this assignment within the week) but I don't think it's happening. On Saturday, however, I'll have the whole day for cooking (Yay!) so I'm planning on a big day, including roasting my veggies, starting the roasted vegetable soup stock, and whatever is the next assignment!

I finally managed to do half of the assignment for this week! I went the easy route and roasted some sweet potatoes. This week has been tough for me time wise but I really am trying to keep up. I left my blender at work so the soup will have to wait til tomorrow but I feel pretty good that I am not quite so far behind anymore!

I haven't done my chicken yet! :( It might not happen tonight, either, but maybe Saturday night. Tomorrow night we are being treated to a dinner out at the swankiest place in STL, Tony's, so I think that is an ok replacement for cooking my own bird ;)

We DID use up what we had in the fridge last night for a late, spur of the moment dinner. A delish omelet and some fresh juice. Pictures in the Flickr Pool.

I had a bad cold so the idea of working with raw chicken was somehow doubley gross to me.

Roasting a chicken is something that I've always wanted to do, but I've never done it and am a little nervous to attempt it on my own. I know I have to take out the giblets or something but the whole process seems a little mysterious to me. Also even though I eat meat I tend not to eat meat on the bone because it kind of grosses me out...I had my boyfriend quarter a chicken for me the other day because I couldn't find skin on breasts at the store and I cringed every time the bones cracked.

Still I feel like I should give it a try sometime...

I have trouble getting the cure posts because I am busier than usual at work, and I have to filter through all of the other posts to get to the Cure ones because the tags don't really work. Or didn't the last time I tried, which was a couple of weeks ago.

We also take fitness classes at night, as well as have regular outings with friends, so often we do not have time during the week.

In addition, I plan our meals for the week on Mondays, and I don't think the Cure posts come out until Tuesday, so then I have to change my plan, which brings us to the weekend.

We've been doing the tasks on the weekends, which I think is totally reasonable. There's a lag of a day or two for me to edit and upload the pictures (I put mine into collages to make them more fun to look at), so that gets me to Tuesday again.

If you're REALLY antsy, I can post placeholders when we do the cooking *grin*
