Lentil Soup with Castelucia Lentils in a tiny Agritourismo in the almost abandoned town the lentils come from. It made the treacherous drive from Norcia worth it.

Bun Bo Hue, which is a spicy Vietnamese noodle soup, thick round noodles in a broth orange with spices with crispy bean sprouts, both green and white onions, consumed with chopsticks to grab the noodles and a large spoon to handle the broth.

My favorite is a soup that my dad makes for us. It has beef, crimini mushrooms, barley, and other great things -- but it is so loaded with tender beef that my husband christened it "steak soup" and the name has stuck. Nearly any soup is great as far as I am concerned -- I could happily eat soup 7 days a week all year round!

I make this super easy red lentil soup (from a Turkish cook book) with tons of very tiny and well-cooked onions and carrots, along with paprika and cumin. Serve with a drizzle of ghee and dried/crushed mint over the top.

My favorite soup is actually more of a stew. Braised beef cubes, with potatoes, carrots, corn, mushrooms, barley and a handful of rice thrown in for good measure! This pot would sure work for my soups, which tend to outgrow the biggest pot I have, as I roam the kitchen and think "Oh, that would be good in there, too".

Ribollita. It's a wonderful bean and veggie soup that you cook once, refrigerate overnight, and reheat the next day. The trick is that when you reheat it, you line the pot with a layer of day-old bread, then add a layer of soup, then another layer of bread, then soup, and so on. The bread dissolves into the soup, creating a thick, stew-like texture. Very filling and comforting on cold winter nights.

My basic One Chicken Noodle Soup:

1 small chopped onion
1 minced garlic clove
1 cubed carrot
1 chopped celery
1 chicken breast
1 tblsp of olive oil
Salt, Pepper & Spices to taste
1 carton of chicken stock
1 cup of egg noodles

Sautee everything (except for stock & noodles) for 1 minute. Pour in chicken stock and bring everything to a boil. Reduce to medium heat for approximately 11 minutes. Remove chicken breast and shred with fork. Bring back to a boil and toss in shredded chicken breast and noodles. Let noodles cook (approximately 11 minutes). Serves 1 for a couple of nights.

My favorite soup starts with chicken or vegetable stock - whichever I have on hand - and a pound of lentils. Then some kind of green leafy vegetable - cabbage, kale, or even Romaine lettuce if it's going wilty in the fridge - use as much as you can jam into the pot because it'll cook down. Carrots or winter squash, red pepper flakes, whatever herbs strike my fancy - keep sniffing the steam as the soup cooks - barley or pasta, black pepper of course. If I have green tomatoes to use up, they go in, too. Cook it a little longer than necessary (and it's OH so good reheated the next day!), and serve with a dollop of sour cream or a sprinkle of Parmesan cheese.

I think that might be not just my favorite soup, but my all-time favorite comfort food!

This is a beautiful pot! My husband is Dutch so we use top-of-stove ware for many dishes, especially for buckets of pea soup in the winter. The secret Dutch ingredient: celery root. Peeling and cubing the root and adding with carrots gives pea soup the 'round,' satisfying taste that is missing from American fare.

My cousin in Ireland taught me to make a Irish stew that is thickened with potatoes, and so thick you can indeed stand your spoon up in it, not that you would want to as it is soooo delicious. That or my homemade turkey soup are my faves.

The "Italian-style wedding soup" they used to serve at the college cafeteria. It was a rather radioactive-looking green, but oh so good.

My favorite soup is made by opening the pantry, picking a can of this, a can of that (just whatever is there), chopping up a large onion, adding a lot of water, and simmering all for about 2 hours. Tossing in a few spices near the end, and it's good!

mushroom soup with as many kinds of mushroom as I can find. I've been giving stockpots the once over since learning how to make chicken stock. My "Clean out the Refrigerator" Soup. Clean and crisp the old carrots, celery, potatoes, etc., chop leftover chicken, roast beef or ham, add seasonings of choice, and simmer for hours. Add some dumplings.

I have this awesome recipe for Peanut soup. It is this wonderful spicy concoction that uses peanut butter! It is hard to pick one though, I am a huge fan of all soups.

We eat a lot of soups for meals, especially in the winter. Our favorite is one with lima beans, root veggies, chinese cabbage, and fennel. It is the perfect anecdote to a cold wintry day!

ooh, tough question. either chicken and wild rice soup or any type of jigae (korean for "stew", which roughly translates to "any type of meat you have on hand with a bunch of scallions, garlic, and veggies thrown in, with red pepper flakes and soy sauce for good measure.")

Pumpkin soup, french onion, vegetable, vegetable beef, pea soup, old fashioned potato w/ham, corn chowder, dutch antilles w/beef, hot & sour, thom kha kai, cream of cauliflower (or broccoli), black bean soup, won ton soup, albondigas . . .

easier to tell you what I don't like: tomato soup and mushroom soup - although I love both tomatos and mushrooms prepared in virtually every other way.

I like matzoh ball soup, which is Jewish penicillin,
I like waterzooi, which is Belgian penicillin, I like wonton soup which is Chinese penicillin, I like my abuelita's sopa de pollo, which is Cuban penicillin.

Nothing is more comforting when you're sick than chicken soup, regardless of which country's version you eat.
