This is a special jam. Purchased on a devilish Jam Hunt in Paris this spring at the Bon Marche (we brought back others too), we can't even tell you where to find it, but we can tell you it has a remarkable consistency and natural sweetness that gave us new respect for Prince Charles (who founded this remarkable organic company in the 80's). Check it:
"Our preserves are made by hand in Somerset. The organic fruits are cooked in traditional copper boiling pans and produce rich, brightly coloured soft set jams and marmalades."
You can actually feel the little raspberry seeds on your tongue, giving it a gritty, crunchy quality, while the lime cuts the boring sweetness and makes it oh-just-a-bit tart. Totally rad.

This sounds so good. I added lemon zest to my last batch of strawberry jam and it was pretty nice. But this rassberry lime thing is something I will have to try.
Also, the jam report totally rocks my world.
