We've had plenty of pizza for breakfast in our day, so scrambled eggs for dinner isn't too far of a stretch! Aside from being a fun change of pace, making breakfast for weeknight dinners has a few other real advantages...
If you think about it, our favorite breakfasts are exactly that because they tend to be quick, satisfying, and easily made from ingredients we have on hand (namely, eggs!). What could be better for those weeknights when you come home starving, have almost nothing in the fridge, and lack any motivation to cook? Breakfast is always a sure bet.
One of the standard meals in our house is simply scrambled eggs and toast. Sometimes we throw in some leftover veggies or a sprinkle of cheese, but mostly it's just plain old scrambled eggs and toast. Another favorite is a bowl of steel-cut oatmeal with nuts and dried fruit.

Last week i made waffles and breakfast sausage for dinner... we vowed that we should do it more often... I use alton brown's waffle recipe, and it is great for dinner since it is hearty and not THAT unhealthy... the one catch for me is that waffles & sausage aren't that well rounded, so maybe throw in a bloody mary with dinner for some veggies!!
our next breakfast for dinner will be french toast, but i like the idea of some dressed up scrambled eggs, or maybe some breakfast burritos!!

Our favorite breakfast for dinner meal is veggies and cheese omlettes and home fried potatoes with toast. We've been known to throw some left over vegetable curry into an omlette on occasion. Soooo yum!

I'm not really a pancake or syrup person, but we eat eggs for dinner all the time. And I totally have that dish. It's the perfect compromise between bowl and plate.

I love a frittata for dinner. And every now and then weeknight pancakes are great. If only my husband agreed.
@TDS7, I'm not knocking the Bloody Mary inspiration, but just slice up some strawberries and sub fruit for veggies. Same vitamins in a waffle-friendly form.

i usually use whatever tomato product i have on hand, onion and usually some fresh herbs. i love to top it with feta cheese. serve with crusty bread, toast, pasta, polenta, etc. seriously easy and one of my favorite dinners!

Your post is very on trend! Breakfast for dinner is trending up even in restaurants. At my house, I love to have pancakes for dinner. Sure you don't get all the food groups but you do get both entree and dessert taken care of in one course!

I love breakfast for dinner! My dad used to work shift work and breakfast for dinner meant that he would get up early to eat with us before he left for the night. It always brings back happy memories completely aside from being easy and delicious. We always did eggs, bacon and sticky rice.
I eat TONS of eggs for dinner. I especially like them on toast with cheddar and mushrooms cooked in a little red wine. I eat this for breakfast, too, although no childhood memories of it.

Like many other posters, we eat many egg entrees for dinner; whether its a frittata, omelette, poached over toast scrambled eggs or eggs poached in tomato sauce-this is standard for us. It's quick, tasty and economical. I've never done waffles or pancakes for dinner only because by the time dinner prep rolls around, I'm using drinking a glass of wine and the thought of messing my taste buds up with a sweet meal just doesn't sound too appealing.
