Weeknight Cooking: Grilled Zucchini, Brie, Artichokes...

2008_06_25-Platter.jpgOK, so maybe we can't really call our dinner inspiration tonight "cooking." It's really just an easy collection of light snacks that together make up a very nice summer meal. We found this particular platter of small bites at Flickr, and we immediately got hungry.

 
 

When it's hot and sticky outside we find platters of small bites like these very appealing. Try assembling your own platter of bits and bites tonight for dinner. We like to stop at Whole Foods or the deli and pick up just a few cheeses and salamis, together with a chopped Greek parsley salad and some white beans. Shave a zucchini and cut some bread and you have yourself a very easy meal. Light yet filling - interesting, but not difficult. It's our favorite way to eat.

The other night we had a plate of Gruyere cheese bites with chopped ham, leftover bean and parsley salad, and sesame crackers and pistachio nuts to follow, along with a bit of leftover Jeni's raspberry sorbet.

What kind of things do you like to put on a snackish dinner plate?

can you explain what you mean by "shave a zucchini"? Do you then cook it, or just toss it raw with oil/vinegar? I am always stuck for good things to do with zucchini, particularly when it seems to take over my entire CSA box at the end of the summer.
