Hale and Hearty has more than a dozen soups on the menu every day. There are staples like vegetable, often a chili, usually a few involving pasta...
They don't knock it out of the park on originality, but we've had some very good soups there (same goes for Au Bon Pain), and we've taken some inspiration from the menu. For example, we had a carrot, ginger, and artichoke soup this week (it's still on the menu, New Yorkers). We love carrot soups, but we've yet to add artichoke to one, so we might start experimenting. They're also big on lentil soups, which has inspired us to look into different varieties of lentils for home cooking.
Have you ever recreated a soup you loved at a deli? Anyone eating at Hale and Hearty today?

My local Shop Rite (in Northern NJ) has Hale and Hearty soups at the salad bar. The few times I've had them, they've been delicious.
More often though, I use the soups there for inspiration. Each soup is displayed with a tag that lists a complete list of ingredients, and it's a great way to get an idea for both classic and new flavor combinations. What's more, their short and simple ingredient lists are a great reminder of how easy it is to make your own soup!

I head to Hale and Hearty for lunch at least once a week! (I check online for the menu and go only when they have my favorite soups.) And yes, great inspiration.

I am a former New Yorker and Hale & Hearty was my favorite lunch spot! The Macaroni and Cheese with beef "soup" was fantastic.
