Simple Breakfast: Fresh Ricotta with Honey and Bread

2007_11_16-Ricotta.jpgThere are heavy meals coming in the next month, and breakfast is no exception to the rich eating of the holidays. Here's a welcome departure - a light and fresh breakfast recipe from Australia's Donna Hay Magazine: Sweet Honeyed Ricotta with Brioche.

Fresh ricotta (try our quick recipe here!) is served with a syrup of honey and vanilla. It's perfect with rich brioche, and just as nice with any good bread. We like the idea of serving this to holiday guests the morning after a heavy meal. With a platter of clementines and other seasonal fruit it's a lovely light breakfast.

Ricotta for breakfast? I might as well just eat a cannoli! Actually, I think I've done that a number of times in the past, hehe.

But ricotta and brioche isn't my idea of a "light" breakfast, though it does sound delicious.

agreed, sparkle! my idea of a "light breakfast" is some yogurt and grapes, not brioche and honey syrup and ricotta.

Fresh plain ricotta with a high fiber whole grain bread and a drizzle of honey is a pretty substantial breakfast, but very healthy. Make a syrup and use brioche and this is a very rich, heavy breakfast.
