• No-bake strawberry cream pie - This looks like such a dressy dessert, and almost no work at all. You just puree strawberries and chill them with a little cornstarch in a graham cracker crust. Dress it up with whipped cream and you're done!
• Nectarines with greek yogurt, honey and lavender - Well, you know how we feel about lavender in our desserts. And we're crazy about nectarines, so as soon as they start showing up at the farmer's market we're making this.

Those look luscious! We've been enjoying fruit salad with greek yogurt - nectarines, grapes strawberries tossed with a bit of pomegranate molasses and honey. Or just a cup of really good thick yogurt, like Liberte Mediternee Plum & Walnut, or Cabot greek-style dulce de leche.

That strawberry pie looks like a jello dessert my mom used to make using cool whip, jello and frozen sweetened strawberries. Nice to find a vegetarian version. (meaning one with no gelatin.)

In Mark Bittman's How to Cook Everything Vegetarian, there's a recipe for a no-cook nut/dried fruit tart crust that you can fill with whatever you like, really. The recipe couldn't be simpler: you blitz nuts in a food processor, empty it, then blitz the dried fruit of your choice with a bit of water to get things going. Mix them together and press into a tart pan.
I love this idea because it's something that my friends with food intolerances can eat, ie it's gluten-free.
I recently made it with almonds and dried apricots and filled with sliced Hood strawberries. Served with whipped cream.

i've made the strawberry cream pie twice in rapid succession--and loved every luscious bit of it (as have my partner and various dinner/vacationing guests)!
the second time, i made the pie in a springform pan, and the presentation was even more impressive!
