Monday Breakfast: How Do You Start Off Your Week?

2008_06_30-MondayBreakfast.jpgAs we sprinkled cinnamon over our cottage cheese and fruit this morning and reminisced about the weekend, we were struck by how differently we eat on weekdays and weekends.

No matter how (or what or when!) we've eaten over the weekend, it always feels good to return to this simple breakfast on Monday morning.

How do you like to start off your week?

Getting up to our normal breakfast on Monday morning has become a ritual to transition us into the week. Cottage cheese and fruit is one we enjoy and have actually eaten for years with very little variation. For us, it's a perfect balance of taste and function.

On the weekends, we feel a little more freedom. We're more concerned with a breakfast over which we can linger and relax instead of one that will fuel us to lunch time.

Breakfast is my absolute favorite meal of the day. I love it so much that sometimes I eat it for dinner as well. I will definitely be trying the cottage cheese and strawberries for breakfast very soon.

Yum, those berries look good! I went strawberry and cherry picking, so fruit with greek yogurt was breakfast today. I've been really addicted to muesli lately too - oats soaked overnight with milk and dried fruit, with more berries, grated apple, yogurt and nuts added the next morning.

A long time favorite is sourdough bread toasted with apple slices and cheese on top, under the broiler until brown bubbles appear.

monday thru thursday breakfast is the same: dry honey-nut-cheerios and a banana; friday is bagel day at work; weekends I like brunch, whether I go out or eat at home (I got into the habit of 2 meals instead of 3 back in college, and still do that today) so it is usually a bit more substantial: egg white sandwich, french toast with bacon, etc.

My favorite is oatmeal with blueberries, walnuts, honey, milk and cinnamon -- it makes me feel great and I eat it even when it's 100 degrees out!

Cooking oatmeal ahead is a big time saver, I make a big batch on Monday then just reheat, we add almond milk, fruit and cinnamon.

This morning I had dry Life cereal out of a sandwich baggie and a warm diet Mountain Dew as I drove to work.

I love breakfast, too, but I usually have to do a grab-and-go breakfast during the week like a piece of fruit or some yogurt with honey or granola. Today, it was a slice of rice flour cake with a drizzle of honey. Oh, and my calcium chew!

Weekday breakfasts are much more function than form, if you will. Today it was fiber one with non-fat milk, blueberries and blackberries; cold cereal in the summer and oatmeal in the cooler months. However on the weekends its a different story. Yesterday it was banana, pecan pancakes with turkey sausage and Saturday it was an egg, potato, onion and chive scramble with english muffins spread with bonnie maman jam (love that stuff). Of course, coffee rules regardless of the day of the week!

Mondays I often have my easy breakfast - Ezekiel almond cereal, fruit (today: plum the last of the black raspberries from yesterday's farmer's market), and unsweetend soymilk.

Then again, I often have that on weekend days too, if I'm eating in.

I generally eat the same breakfast every day: oatmeal (quick cooking plain oats) with two T of flax meal, a banana and maple syrup. Tastes good, is filling and very nutritious.

I find it easiest to eat at work as I'm catching up on email. nonfat vanilla yogurt, flax meal, sliced almonds and a handful of granola. weekends are usually a big breakfast (eggs and toast or egg sarnie) with a snack around mid-afternoon and a later dinner.

With all the summer produce, I find myself making smoothies -- it's quick and I can take it "to go." Today's was mango, strawberries, and a frozen banana with a splash of passion fruit-guava-orange juice. It feels good to start the week healthfully after a weekend of unhealthy food, partying, or similar debauchery.

I sometimes just do plain yoghurt (full-fat, please) drizzled with dark honey and cinnamon, but when I wake up just starving I have homemade whole wheat crackers and cheese, or a hard-cooked egg.
But I don't do anything different on the weekends. We're a get-up-and-go household; we don't sleep in, we take the dog out right after we wake up, then work hard to finish 'chores' by 2:00 or 3:00 so we can relax for the rest of the day. Only very occasionally will I actually cook breakfast.

I'm a big fan of single serve yogurt (to keep me honest) and some homemade granola.

Lately I've been nibbling on a nice thick piece of bread with some kind of delicious jelly.

But my MOST favorite "fancy" breakfast is this:

This morning I had a bowl of local fresh strawberries, sliced bananas and wild blueberries topped with whole milk organic yogurt and homemade almond granola. Yumm.

Every Saturday is pancake day. Homemade wheat pancakes with syrup; sometimes scrambled eggs and milk and orange juice.

This summer I've been eating the same thing every day--two whole grain frozen waffles (lifestream makes good ones), plain non-fat yogurt, a bit of jam, some berries and some sliced almonds. It's fast and filling.

Kassie I'm with you. I had a ziploc baggie of green grapes and a coke zero for breakfast... I gotta one up you though. I got my coke from the fridge so it was a "cool one" once I got to work. But for me breakfast is usually what I brought for lunch because I have no willpower to pack two meals.

this summer i'm addicted to my "peaches and cream" breakfast:
1/4 c old fashioned oats
2 tbs flax seed meal
1/2 peach
vanilla soymilk

microwave for 1 1/2 - 2 minutes, stir, and enjoy!

when it's too hot, i simply replace the oats with grapenuts for a cold cereal.
(i want to like muesli, but just can't get into the cold, soggy oats)

I am bad and often just start off with a cup of coffee, then jump straight to lunch later. Otherwise breakfast is pita, nanna, or rice.
