Try This: Chicken and Pumpkin Stir-Fry from Donna Hay

2008_10_28-pumpkinstirfry.jpgWe wish we had a bigger picture of this dish, but even a small image looks colorful and delicious to us. We talk a lot about pumpkin this time of year, but it is usually in the context of pie or soup or, at the very least, combined with traditional spices.

Have you ever thought of pumpkin as a stir-fry ingredient? Well, we saw this recipe over at Donna Hay's website and immediately wanted to share. Pumpkin, chicken, onion, red chilies, and fish sauce...

 
 

Chunks of pumpkin are sautéed with chicken, then covered until they get soft. The recipe calls for basil, which sounds great, but a green vegetable—green beans, sugar snap peas, even kale—would brighten up the dish and add another texture. It would also be good with chopped peanuts on top.

I make a kabocha stir-fry with garlic, sugar, fish sauce and black pepper, based on a recipe from "The Foods of Vietnam." It's really good!
