Make This Tonight: Zucchini Rice Gratin

The recipe is from Epicurious, and it includes rice — not conventional for a gratin, but a good way to use up some pantry staples.

We love gratins in the summer. They're easy, colorful, and can be adapted to whatever you have on hand. We're thinking of using yellow squash, throwing in a layer of spinach, and calling it a night.

Smitten Kitchen recently posted this zucchini strand spaghetti recipe, and I really love the concept - replacing some of the pasta with finely julienned squash "noodles." It's very easy if you have a mandoline, and can adapt to lots of different summer pasta dishes. I added a dab of pesto, fresh cherry tomatoes and goat cheese to mine.

This is a favorite at our house. I always try the recipe as is and then make any changes I think might work for me. I have substituted the rice for brown rice and it is delicious as well as healthier than all the white refined carbs. Is filling enough as a main dish in my opinion.

Try it with quinoa! Makes the dish even more nutritious and high-protein. Particularly if you're watching your carb intake.
