Light Meals: Chicken Milanese

2008_05_27-chickenmilanese.jpgYes, the chicken is breaded and pan-fried. But see that big wad of salad on top? That's just the type of meal we crave after a weekend of eating burgers and chips.

Chicken Milanese is traditionally a thin chicken cutlet topped with a pile of lightly dressed greens, usually arugula. But we have started making this Italian dish with simple, grilled chicken and a variation of salads.

A few weeks ago we took a few thin chicken cutlets, seasoned them with salt and pepper, and cooked them quickly on a grill pan. We then squeezed some lemon on them and topped them with this Orange, Olive, and Fennel Salad.

You could make this combination with pork or thin strips of steak — the basic formula can be tailored any number of ways. It's like having a big, healthy salad with a side of meat instead of the other way around. And if you have some greens growing in your garden, a good way to use 'em.
