Ingredient Spotlight: Agretti

2008_07_22-Agretti.jpgAt the Farmer's Market recently, we saw a bunch of agretti. We didn't know what it was, so we looked it up.

 
 

Agretti is an Italian vegetable - the name means "little sour." Other names for agretti are roscano or barba di frate. It contains the same vitamins and minerals as spinach, and can be prepared the same way as spinach; served raw in a salad, steamed, sautéed, cooked in omelets or soups.

Agretti is tolerant of salty soils and is sometimes compared to purslane.

we got a lot of agretti in our CSA box (from Two Small Farms). we sauteed it w/ garlic and chili flakes, we sauteed it with some caramelized onions or shallots and a little white wine, and we also made frittatas with it. it's good stuff!

I agree with Ratita - chili flakes and garlic sautee with agretti is beyond words. It's crunchy, sweet, and refreshing. I also got my agretti from Two Small Farms and am on a hunt to find more of it.
