There is a bounty of vegetables rolling out of the farmers markets and piled up in CSA boxes. But we still don't eat enough vegetables. We hesitate to reach for new, untried veggies sometimes, and we stick with the ones we're comfortable with and know how to prepare quickly. But we want to incorporate vegetables into our whole diet - not just our cooked meals. We want to snack on veggies!
So here are five quick tips for getting more vegetables into your diet. Share your own!
1. Iceberg lettuce is good for something - Maybe not for salads, but great for wraps. Wash and dry the smallest, tenderest leaves of a head of iceberg lettuce and wrap around cheese and lunch meat, or dip in hummus.
2. Eat more asparagus - Blanch tiny asparagus spears and dip in all sorts of things, or just eat straight from the pan.
