Easy Weekend Breakfast: Corn and Eggs

2008_08_15-cornandeggs.jpgThere are so many things you can do with summer corn, but if you haven't thought about eating it for breakfast, let us persuade you...

 
 

We grew up eating this dish on weekend mornings, although it usually involved canned corn. Now we use fresh when it's in season, microwaving it for a few minutes, then slicing it off the cob and into the skillet.

A big pad of butter, some salt and pepper, and it's good to go — juicy, sweet corn nestled into peppery scrambled eggs. We just ate it for breakfast and are strongly considering a repeat performance over the weekend.

Does anyone else eat corn and eggs together? Or corn for breakfast?

Ooh, yum! My mom used to put corn into pancakes, and that is still my favorite pancake add-in. Corn in eggs sounds so good! Might have to have that for dinner tonight!

Frozen (or fresh) corn in mini cornbread muffins. i will try corn in eggs also. but i will not eat green eggs and ham, i will not eat them sam i am...my son loves when i read that to him.

I love sweet corn and scrambled eggs in my fried rice, so I will most undoubtedly love this!

When I want to make a healthy omlette I'll take egg beaters and toss in a good bit of soycutash from Trader Joes. Its a mix of corn, edamame, and diced peppers. I love it!

I found an omelette recipe a few years ago that called for sweet corn (cut straight from the cob; no pre-cooking necessary), goat cheese, and fresh chives. It's divine... I eat it for breakfast, or sometimes dinner, with a salad and a glass of wine. It truly tastes like summer to me.

Oh, yes, and I like to finish the dish with a chopped tomato and some crumbled cheese (feta or parmesan).
