Easy, Nourishing & Delicious: Massa Brown Rice Egg Bowl

2010_02_01-eggbowl.jpgThis winter I've been drawn to bringing more whole grains into my diet. I've always intellectually understood that they're better for me than processed grains but I'd never actually craved them until I was introduced to Massa Organics' Brown Rice last fall. And now I honestly don't know how I managed to feed myself without a large pot of this delicious, nutty rice in my refrigerator. Read on for my favorite recipe!

 
 

Careful readers will remember that Rachel Cole in her Single Busy Girl's Kitchen Tour said that Massa Organics Rice "will convert anyone who thinks they don't like healthfood. It can do anything white rice can do." Sara Kate has also caught the fever, mail-ordering 20 pound bags for her New York City kitchen.

Massa Organics' rice is chewy, nutty and not at all heavy or gummy. Greg Massa says that their rice, a medium grain Calrose, is the same as most rice grown in California. Besides being organic, what sets Massa Organics' rice apart from others is that it's left to fully mature on the plant before it is harvested. This contributes to its sweet, nutty flavor.

I cook up a large pot of Massa Organics' rice on Sunday night and since it reheats beautifully, it's always handy for quick, delicious meals as the busy week unfolds. Some of the things I use it for are in a stir-fry, in soups or even heated up with a little milk, cinnamon and a touch of sugar as a breakfast pudding.

Here's a favorite recipe of late, one that I make for breakfast lunch or dinner, whenevr I'm pressed for time but still want something delicious and nurturing.

Quick and Heathy Egg Bowl

If you have a little more time, you can add more vegetables like chopped carrots or chard (cook them for about 3 minutes first before adding the green onion.) You can also spice this up by adding garlic, ginger, peppers or even a touch of curry powder. Cooked chicken or salmon are a nice addition, as well as tofu. But really, you can eat this just as it is and you will be very happy and satisfied.

serves one

1 to 2 T oilve oil
one green onion, thinly sliced
1 cup cooked Massa Organics brown rice
salt and pepper
1/2 cup frozen peas
1 or 2 large eggs

Heat the olive oil in a small frying pan over low heat. Add the onion and cook for about one minute, until the onion turns bright green. Add the rice, season with salt and pepper and stir gently until rice is hot. Add the peas and cook until peas heat through and are bright green.

Spread the rice in an even layer over the bottom of the frying pan. Crack the egg(s) into a small bowl and carefully transfer them to the top of the rice layer. Season with salt and pepper and cover. Cook the egg to your desired doneness (I prefer a runny yolk.)

Carefully spoon into your favorite bowl and enjoy!

My favorite brown-rice leftovers meal:

Heat the rice and put in a bowl. Add finely chopped onions and basil, crumbled feta, and chopped tomatoes. Drizzle with balsamic vinegar and olive oil and a touch of maple syrup for sweetness. Grind some pepper and salt over top and mix it all together.

This is savory-sweet delightfulness and I always make more rice than needed so that I can use the leftovers for this for the next few days.

Chopped avocado is also delicious here.

Love the brown rice bowl!

Especially with salty and sour bits of pickles and preserved clams, seaweed, etc.

So I could just use any medium-grain brown rice, right?

Massa brown rice is amazing. It's one of the few things I asked for Christmas last year!

I love this -- and I'd like to try more of this cooking this year. The formula of [rice, quinoa, couscous, pasta] aromatics green veggies [egg, shredded chix, beans] is infinitely adaptable depending on what you have in your fridge or pantry, and there's something very homey about such simple food. More of this, please!

msingerman: Yes, any medium-grain brown rice will do, as long as you really like it! The reason I enjoy this egg bowl, and that I am now eating more brown rice in general, is that I find the Massa rice so very delicious. But if you have another rice that you love, of course you should use that.

I was seriously planning on having this for dinner, only with leftover quinoa in place of the rice. I also thought of tossing the quinoa with a bit of parmesan before adding the egg, and this might be nice with the rice too.

I am absolutely having this for dinner tonight!

i made this tonight - it was good. simple, but tasty. i cooked it on high-heat in a wok instead of low-heat in a frying pan as suggested. i don't like using olive oil at high heat and normally use coconut oil for such an occasion. the coconut oil impart a fabulous background flavour in the delicate rice.

Made this for me and my lacto-ovo roommate for lunch today. Turned out absolutely stellar!

Massa Rice is delicious-I buy got it ChefShop.com and enjoy it's amazing flavor-it brought me back to Brown Rice- as I am trying to get back to cooking with more whole grains!

I really love brown rice, so am intrigued by this Massa Rice. Is it really that much better? I normally eat Lundberg Short Grain Brown Rice. What's the difference, really? I don't want to unnecessarily splurge, but if it'll rock my world, I'd love to try it.

My favorite easy, quick one-bowl meals are either rice or pasta mixed with vegetables (heated frozen or left overs), a touch of butter or olive oil, salt and pepper and a dusting of cheese. Add tofu, chicken or tuna (left over cooked or canned) for some extra protein. Yum! This got me through college. I like this new alternative!

made this tonight for dinner. i added garlic, carrots and celery and was blown away by how tasty it turned out. this will be my new go-to easy dish.
