And since we're writing about grits, we thought we'd give you a good mail-order source for an exceptional, stone-ground variety. Anson Mills in Columbia, SC, grows organic, heirloom corn and sells their products to chefs all over the country...

 
 

We've never ordered from Anson Mills, but we've read good things. Glenn Roberts, its founder, set out to save and grow near-extinct varieties of grains organically, reintroducing the country to some ingredients that were plentiful before the Civil War.

Thomas Keller and Tom Colicchio are fans--sounds good to us. You can order coarse grits, which take 50 to 90 minutes to cook, or "quick" grits (which are still, we assume, much coarser than the average quick grits you'll find in a grocery store) that take 20 minutes to cook. Both are $5.95 for 12 ounces.

I love that Columbia, SC & Anson Mills were mentioned...I live & work here and I am so happy we got a post! YAY! The mill is pretty neat looking, it's lit up at night & brings a bit of charm to a city filled with office buildings. Thank you for mentioning us!

Everything I have ordered from Anson Mills has been fantastic. On their website, they have a recipe for shrimp and grits that is quite possibly one of the best tasting things I have ever eaten.

As a Southerner, and therefore, a grits connoisseur, I can attest that Anson Mills grits are the best of the best. If you've tried grits and didn't like them because they were "tasteless," these are definitely the way to go. I've been to restaurants where they specify Anson Mill grits on the menu.

I've never cooked with these but I make a point to order any restaurant dish made with them. Wonderful.
