Over Easy: Egg on Pizza

2007_11_08-Pizza.jpgEgg on pizza - sound strange? This Wild Mushroom and Bacon Pizza with "over easy egg" is a recipe from New Orleans chef John Besh in House & Garden.

We actually tried this last week, and it was delicious. Prepare a pizza dough round with sauce, cheese, and herbs. Crack an egg over top and sprinkle fresh Parmesan, salt and pepper on top. Bake at 500F for about eight minutes. The egg will be just set, with a wobbly golden yolk that oozes onto the crust.

We are fans of the humble egg in every form, but this is a new favorite! Links to more pizza recipes below.

We had egg on pizza in Rome, where people seemed to think it was pretty normal.

What I'm really missing from that experience is a variety of hot salami that isn't quite pepperoni and also isn't quite available in U.S. delis.

I think this is quite common over Europe. I was in England last Thanksgiving and my brother's mother-in-law ordered a pizza with egg on it. It sounds pretty delicious!

At Rosa's Cafe in San Fran they have the most delicious breakfast pizza creation known to man: fontina cheese, ham, and a fried egg in the middle. It is heavenly.

In Italy they served me a pizza once, with a boiled (and peeled of course) egg cut in half in the middle and I found it rather strange because I never had egg on a pizza before. However, it was one of the best pizza's I ever had.

Egg on pizza reminds me of Italy. It's normal - but I wasn't there long enough to get used to it.

There is a pizza at Otto, they call it pane frattau, with pecorino and fried egg. It's amazingly good.
