Five Ways to Eat: Quinoa

Quinoa is one of our favorite quick-cooking whole grains. It's nutty and fresh, and it has a fine, fluffy texture very similar to couscous. It's wonderful in so many recipes, and it's packed full of protein and nutrients too! Here are five easy ways to incorporate more quinoa into your daily eating.

 
 

Quinoa comes in many different varieties, including the red kind pictured above.

What's your favorite way to eat quinoa? (Quinoa, by the way, is pronounced KEEN-wha.) If you're trying to find it to try it, look in the bulk bins at a good health food store, or at Whole Foods. It will be less expensive there, and you can buy just a cup or two to to try it out. One cup of quinoa uncooked will be about three cups cooked.

  1. Just plain - Quinoa has a lovely nutty flavor, and it can cook in less than 20 minutes, so we think it's a great alternative to pasta or rice for a quick meal. Here's how to cook quinoa.
  2. Stuffed into vegetables - Quinoa makes a great stuffing. We love the quinoa-stuffed dumpling squash pictured at the top of this post (so great for fall!) and we also really enjoy this quinoa and mushroom stuffed zucchini. This gorgeous dish of chile relleno is also stuffed with quinoa.
  3. Substituted for another grain - Quinoa has a similar texture when cooked to other fine and fluffy grains like bulgur wheat. So it's great substituted in dishes that call for bulgur, like in this quinoa tabbouleh. Here's another version of tabouli from a reader.
  4. In a grain salad - Quinoa is a fabulous base for easy, quick, filling grain salads. We have a whole roundup of them here, and one of our favorites is this Quinoa Salad with Grapes.
  5. For breakfast - Quinoa's high protein content and quick cooking time make it a great breakfast! Try it with a little maple syrup and a handful of nuts, or with a fried egg on top!

One of my favorite fall dishes / comfort food is chicken and quinoa --- It's like chicken soup only better.

I cook the quinoa in chicken stock, with rosemary and onions and tyme and bits of roasted chicken. It's SO good.

I only discovered this stuff recently and can't get enough of it. It's such a great grain. I mixed it with some root vegetables to boost the earthy flavors. I can't wait to try more variations on this. Stuffing vegetables is such a good idea!

ever since learning of quinoa a few years ago i've had it in permanent stock on the counter ingredient jars. it's nearly perfect.

a favorite is to make the quinoa then add butter and a little flour. pack it into a pie plate, bake it and use it as a crust for quiche. the red makes a nice impact on a plate, too ;)

I love quinoa! I like to use it in place of rice under some stir-fried vegetables, or mixed into soups.

Nico_forgot--I would like to try your quiche crust idea. How much quinoa, flour and butter would you use for one quiche?

My local Costco carries quinoa. Even there it isn't cheap, but it's much better than the price at Whole Foods.

Love quinoa...and I just bought stone ground quinoa flour for baking but haven't tried it yet. La Tartine Gourmande uses it in some of her recipes, and she talks about using the whole grain here: http://www.latartinegourmande.com/2009/08/24/black-quinoa-salad/

I use it as a filling in savoury vegetable pies, with eggs or cheese, shredded carrots and zucchini or broccoli... very good!

@msbetsy: i think in my nine inch pie plate i cooked up a little less than a cup of quinoa in one cup each vegetable stock and water. once it was cooked i added about 2T of butter, mixed it in, and put in about 2T of flour. mix it well and pack into the pie plate. it doesn't matter if you holes in it because you can pack them in with the extra that pulls over the edge. it's pretty simple.

bake it at 350 until firm and kinda crispy at the edges. put in the filling and pour the egg mixture over it and cook normally. should work just fine :)

the red quinoa with spinach-goat cheese quiche is my favorite.

my favorite is in a quick n dirty salad -

3c cooked quinoa
juice of 1 lemon
2 scallions, sliced thin
crumbled feta
fresh chopped parsley if i have it on hand

While looking for a savory recipe for mangos, I discovered this recipe for Quinoa and Mango with Curried Yoghurt http://www.epicurious.com/recipes/food/views/Quinoa-with-Mango-and-Curried-Yogurt-108112

SO delicious! My husband still raves about it and I have become a quinoa convert!

(I did omit the red bell pepper and peanuts - peppers just seemed to be there for color and I didn't have peanuts - the quinoa had enough nutty flavor anyway. I also substituted cilantro for mint b/c that's what I had)
