Yes, according to Mealtime.org, the public face of the Canned Food Alliance, it is indeed National Canned Food Month. Who knew?
Mealtime.org is a good resource, themed month or no, for those of us still in cupboard cleaning mode. They have a large database of recipes that focuses on canned and preserved ingredients, good for inspiration and help in cleaning out that last can of pineapple, languishing up there since last spring. They also have some canned food FAQs and some nutrition info as well.











The biggest eye opener to me was when I read somewhere [and just saw it corroborated here] that the canning process actually increases the nutritional value of tomatoes, particularly by making the cancer-fighting antioxidant lycopene more readily available to your body.
I've also read about a Cornell study that showed that canning sweet corn increased the antioxidants in it too. This was doubly surprising to me, as I'd generally considered corn to be pretty much without nutritional value, canned or otherwise.
