Essential Bar Ingredient: Rosemary Simple Syrup

2008_06_26-RosemarySimpleSyrup.jpgMany cocktail recipes for the spring and summer call for the addition of simple syrup. Even better is when the recipe calls for a flavored simple syrup, such as rosemary.

This recipe is very easy to make, and your kitchen will smell so good while you're making it. This is taken from the May 2007 issue of Southern Living magazine.

Ingredients

1 cup sugar
1 cup water
4 fresh rosemary sprigs

Preparation

Stir together first 3 ingredients in a medium saucepan over medium-high heat. Bring to a boil, stirring occasionally, and boil 1 minute or until sugar is dissolved. Remove from heat, and let stand 30 minutes. Pour liquid through a wire-mesh strainer into a cruet or airtight container, discarding rosemary sprigs. Cover and chill 4 hours. Garnish, if desired. Syrup may be stored in refrigerator up to 1 month.

Makes about 1 1/2 cups.

When I make a blackberry pie, I add rosemary to the blackberries, sugar and lemon and let it sit. It tastes and smells fantastic, but it really is a pain to pick out any leaves that have come loose when you stir the mixture around. I never thought of making a simple syrup, but it would probably do the same thing without all the hassle.

My oldest sister was just telling me about making this last week. She loves it in teas.

On a random note she also mentioned that a restaurant nearby her on Miami Beach uses a rosemary mix in their outside misters and it keeps the bugs away.

My friend Elise did something like this. We added rhubarb to the syrup as well, then added the syrup to fresh lemonade with club soda.

We started to call it a Rhuby Slipper. Very delish! Would be great with citron vodka!
