Picnic Fare: Pork Tenderloin and Onion Jam Sandwiches

2009_05_01-porkpicnic.jpgWell, the weather in New York City is going back towards brrrr this weekend, but while it was unseasonably warm earlier this week, we managed to squeeze in one weeknight picnic in Central Park. If you've got good weather and are planning a meal outside, may we recommend our favorite sandwich?

 
 

We love any pork sandwich, whether it's slow-cooked pork shoulder or a roasted pork tenderloin. Tenderloin is especially tidy for a picnic; marinate it however you like, then roast or grill it and slice it up. Or use leftovers from a previous dinner.

The onion jam is a mixture of caramelized shallots, apricot jam, balsamic vinegar, and lots of salt and pepper. It's the topping we put on our Chicken with Shallot-Apricot Sauce, sans the chicken. You can certainly use a regular onion rather than shallots.

Along with our sandwiches, we packed some homemade broccoli slaw (recipe coming next week!), a couple of these cookies, and some bottled sodas.

It was a quick, on-the-fly picnic for two that was such a refreshing start to Spring.

I've gone on several picnics already this year... frequently it's just some baguette and brie from the grocery store on the way to the park, but pasta salad is also another standby.

I'm going to a shakespeare in the park evening soon and am putting together the picnic basket. What will certainly be included is:
- potato / cucumber / carrot salad
- some different flavoured hearty muffins
- 1 or 2 of those stuffed breads (with roasted veg)
- 2 turkish breads filled with a fresh coriander and chicken salad
- cold chicken wings

and whatever else I can come up with!
