We were looking for something good and easy to make last week with a package of boneless, skinless chicken thighs. We happened on this recipe over at Epicurious: Chicken with Lemon, Cumin and Mint, and found it was so fast and so good. Shake up the chicken with lemon juice, mint, garlic, oil, paprika and cumin - let it sit for a bit then broil quickly. It was delicious!
Turns out the recipe is from Lori Longbotham's Lemon Zest, a cookbook focused on lemons. Lemons are one of the few ingredients that do indeed go well with everything, and it sounds like this book does great things with them. This recipe was certainly a keeper!




I have this book. It has recipes and instructions for just about every single thing you could ever hope to do with a lemon -- a great little cookbook! My only complaint is the lack of pictures, but that's certainly not a dealbreaker where I'm concerned.
