Seasonal Combination: Fennel Plus Nectarines

We got some fennel in our CSA pickup yesterday and immediately thought of how much we love it in a salad with oranges — this orange, olive, and fennel salad, specifically. But oranges? Not exactly in season. So tonight, we're attempting a new flavor combination: fennel and nectarines...

 
 

We plan to slice the fennel and dress it with olive oil, maybe a splash of lemon juice, and add slices of ripe nectarines with some shavings of parmesan cheese.

Fennel needs something soft and sweet to balance its crunch and its anise flavor. We think nectarines should work out beautifully.

What do you think? Anyone else tried this combination?

I've never tried it, but it sounds wonderful! And I was just thinking the same thing about oranges. I was craving a big crunchy fennel salad but couldn't think of what to pair it with...
