Those strawberries we were slicing this morning were for these—light, fresh cups of homemade Jell-O for a quick weeknight dessert. We're eating as many strawberries as we can right now, and while we really wanted shortcake or maybe a whipped cream fool, this was the more sensible choice after a weekend of burgers and hot dogs.
The recipe is from Martha Stewart's Everyday Food, and it has just four ingredients: strawberries, lemon juice, sugar, and gelatin. Well, there's some water in there, too, so five.
One thing we'd pay more attention to next time is the foam. When we stirred the warm gelatin mixture and added it to the strawberry juice, we got a layer of bubbly foam that stayed put when the gelatin solidified. Not a big deal, but we might be more gentle in the future (less energetic whisking) so we get a smoother result.

We followed the recipe and added chopped strawberries on top, but these would be great with whipped cream, too. A little less healthy, but maybe you didn't eat as many burgers as we did over the weekend...

At work, we flame the top of stuff with agar in it with a bunsen burner to get rid of bubbles. You could do a quick pass with a kitchen blow torch and remove the bubbles similarly.
Really just another excuse to play with that blow torch.

My grandmother always made frothy jello and I've never known how she did it (I LOVED it that way). I was thinking it had egg in it but maybe she just whisked or beat it? Does anyone know how to make it completely frothy?

i haven't had a strawberry since i learned the soil they're grown in gets sprayed with mercury. we should start seeing some local organic ones soon, though! this has been a long cold spring.

(I'm now thinking about doing a gradient of different ratios of jello to whipped cream just to see how it turns out)
