Recipe: Pineapple Basil Cocktail

There was plenty of basil and the liquor was flowing easily last night, so we came up with another cocktail — this time with pineapple and a hint of lime...

 
 

Again, we tasted this cocktail using vodka and gin, but this time, gin won out. We're not sure exactly why — maybe some mixologists have a reason — but it just seemed to give the pineapple more body. Because the juice we used was pretty sweet, we added some lime to tart it up.

The basil was more in the background here than in our rhubarb cocktail, but it did give a little almost-savory twist which we liked, especially when we chewed on a bit of leaf while drinking.

Pineapple Basil Cocktail
makes one drink

3 medium to large basil leaves, rolled and sliced into thin strips
quarter of a lime
1/4 cup organic pineapple juice
1 1/2 oz gin
ice
club soda

Put the basil and lime in the bottom of a glass and muddle, either using a muddler or the handle of a wooden spoon. Add pineapple juice, gin, and ice cubes, and top with club soda. Garnish with a slice of pineapple, lime wedge, or a sprig of basil.

Sounds deliciously refreshing. I wonder what it would taste like if you used lime basil?

I tried this. At first blush, it had quite the bite to it, but there was something very refreshing about the flavor. I wasn't going to finish the drink as it was, but I figured if I sweetened it up a bit, I could end up with something enjoyable. I didn't have any simple syrup on hand, so I simply added 2 heaping teaspoons of sugar and a bit more club soda and mixed it all together. Much more to my own liking. I am normally a sangria person and that's it, but this recipe sounded so good, I thought I'd step it up a bit. It seems to go to your head pretty quickly, lol.

Just had this - had to use tonic instead of club soda, but still very delightful. This will be a great one for really hot summer days, and I ALWAYS love basil. For the pineapple juice, I used the juice from a can of chopped pineapple.
