Loving: Homemade Lemon Curd

2008_04_09-LemonCurd1.jpgLook what we had for breakfast...

For a long time, we shrugged off making lemon curd because it seemed labor intensive. We're not sure where we got that notion, but separating and heating egg yolks to just the right temperature sounded hard.

Let us assure you, it's not. Lemon curd is fantastically easy to make and uses ingredients — eggs, sugar, lemons, and butter — that we'll bet are sitting in your fridge right now.

The end result is much more than a sum of its parts. It's silky, sweet, and tart. And beautiful! Who can resist that sunny color early in the morning?

We used this recipe from Martha Stewart. If you want something home-baked to serve with your lemon curd, try our Fresh Cranberry Scones or Lemon Sesame Muffins.

Oh, and if you make homemade lemon curd and scones, be sure to brew oneself or friends some looseleaf black tea. Let the lemon curd serve as the milk, sugar, and lemon some add to tea and keep the tea black. Nirvana!

I LOVE lemon curd, and was shocked (when I finally made my own) to discover how easy it is... I'm feeling some baking inspiration from this post!

I gave up sweets for the month, because I'm a junkie trying to kick the habit. You guys are killing me.

Make meringues with the extra whites, then drizzle the meringues with the curd. Yum.

My husband makes a lemon curd cake with layers of cake & curd topped with meringue. It's my favorite and i've placed an order for my birthday this week. Can't wait!
