The names of these heirloom eggplants are: - Turkish (orange), Louisiana Green Banana (green), Ichiban (long dark purple), Snowy (white), Listada de Gandia (purple), and Rosa Bianca (lavender.)

i just read in either mark bittman's or alice water's cookbook that the eggplant got it's name from the little white variety that looks like an egg.

My CSA provides us with a few of these varieties. Always fun to get surprised by stuff you've never seen before. Those Rosa Bianca ones can get pretty big.

Oh, I'd like to see you post about how each one tastes. I find the white one to be milder. I get a small allergic reaction to the deep purple ones.
