We have friends in the country, and on the way to their home there's not one but two pumpkin patches. The rows of green vines and orange globes call out to us - pumpkins are ready!
Fat orange pumpkins are a fall cliché but we still love the rich orange squash. It's a fruit, not a vegetable, technically, and its bright orange flesh is incredibly good for you. Roasted, steamed, pureed, baked - it's healthy and smoky-sweet, an original New World superfood.

We usually avoid pumpkins at our house, mainly because they just end up carved and slowly liquefying on our doorstep, but if there's a way we can use the results of carving to make some food, maybe we'll reconsider...

If you're planning to cook with the innards of your jack o'lantern, shop very carefully to make sure you're getting a "pie pumpkin." Many of the pumpkins currently sold for carving are not intended for eating and will be an unpleasant taste surprise.

When we were staying at my cousin's house somebody smashed her pumpkins that were on her porch.
We made pumpkin cheesecake out of them and it was very good!
