In Praise Of The Humble Turkey Sandwich
Fresh Ideas for Thanksgiving Leftovers

2009_11_27-TurkeySandwich.jpgI have a confession to make. Even though I enjoy turkey with all the trimmings, my favorite part of the holiday meal is being able to make a turkey sandwich afterwards! I crave them late at night, and pad into the kitchen in my pajamas, pulling all the leftovers out of the fridge. And even with all the fresh ideas we've given you this weekend, this classic sandwich is still the one I return to over and over.

 
 

For me, there's nothing quite like cold turkey layered between bread, mayonnaise, cranberry jam, and lettuce. That's how I do it - very simple. Sometimes I'll add some cold leftover stuffing.

I'm sure there are hundreds of different ways to make a turkey sandwich. How do you construct your post-holiday turkey sandwich?

I wish I had Thanksgiving leftovers at my house, because this is exactly what I would do with them: I would take little bits of every dish – the turkey, the gravy, the sweet potatoes, the green beans in mushroom soup with the crunchy onions on top, the stuffing and the cranberry sauce – and would stuff them into little biscuits. I’d roll them in Pillsbury crescent rolls, or split open a Hungry Man Buttermilk roll. I’d bake according to directions. I have no shame. But, I also have no leftovers. I hope you do, and I hope you had a very happy Thanksgiving with friends, family and food you love.

I like it with cream cheese and cranberry relish instead of mayo and cranberry sauce, but yes. Oh yes. Yum.

Confession time: While I would be mortified to serve it to guests, I buy a box of Stovetop for the express purpose of making sandwiches (which must consist of white meat, jellied cranberries, the Stovetop, on white bread with mayo).

Butter, mayo (yes, I know, disgusting, but it's only once a year), turkey, WARM oyster stuffing (well, we call it dressing, but whatever), and cold cranberry sauce on Portuguese bread. This is my very favorite sandwich.

Mine was with some dijon on one slice of bread and cranberry on the other along with goat cheese and some lettuce. Simple and delicious.

Butter, salt and turkey on white bread. If I have them, I sometimes add local bread-and-butter pickles. Best leftover sandwich ever.

Our family favourite is a hot turkey sandwich - thick, toasted brown bread with a filling of well-seasoned turkey meat, and hot leftover gravy poured over the whole thing. Artery-clogging bliss.

Ideally, you can plan the holiday menu with plans for tasty leftovers. Sausage stuffing goes to stuff mushrooms later, sauteed carrots and mushrooms go into the soup pot with the turkey carcass and meat debris, cranberry relish gets used for cranberry orange cake or muffins, but rolls, sliced turkey can be used for a delicious sandwich like yours or a hot brown (need bacon and the delish mornay sauce) or just a great open face sandwich. Yum!

I'm with you keeperrox! I didn't take any leftovers except turkey this year, so I made Stovetop (for shame!) and green bean casserole at home to have as "leftovers" with my turkey !
