Thanksgiving 2007: Potatoes with Roasted Garlic and Dill

Carrots in the mashed potatoes - beautiful and hearty. This recipe for Roasted Garlic Mashed Potatoes with Carrot Flecks and Dill from blogger Figs with Bri is one of the best mashed potato recipes we've seen this season. Dill, buttermilk, carrots and roasted garlic all promise to add a little something more to our potatoes this Thanksgiving. Dill, that natural friend of the summer potato salad - we've never tried it in mashed potatoes, but now we will.

Mashed potatoes made with yogurt (instead of milk or butter) were a chance discovery made by my house-mate a couple of years ago when she came home from working as camp staff toting a 2-gallon bucket of nearly-expired yogurt. In mashed potatoes yogurt creates a rich, tangy flavor - the combinations was was one of the best discoveries of that year, and it's been a consistent presence at my holiday table ever since.

Most of the time I make mashed potatoes, I toss in some dill. It's super good.
