Hanukkah began at sundown Sunday evening, and the Festival of Lights will run all week. We like to think of Hanukkah as the Holiday of Fried Food; fried treats are very traditional, and it's a great excuse to eat some doughnuts! What are you cooking for Hanukkah this year? Here are a few recipes that made us look twice.




Actually, our favorite chanukah dish to make is applesauce! We cook it with the skins on, and it turns a wonderful red color.

I just made a huge plate of latkes on the first night, and that's what we had for dinner. It was awesome.

I made yam latkes with onion, cumin and a bit of cayenne. They brown and caramelize with just the right amount of sweetness.

I made latkes with yukon gold potatoes, yams, and onions. ( salt, whole wheat flour, and eggs).
the trick with the oil is to use 3/4 canola for the higher smoke point, plus some olive oil for flavor (the other 1/4).
they came out *really* well; served with applesauce, and choice of sour cream (sour cilantro cream for me and other non-dairy folks, or cow's milk sour cream)
