Easter Sunday is this weekend, April 12th, and the Orthodox church's Easter Sunday (often called Pascha) is next Sunday, April 19th. That means there is going to be a lot of good food on tables this week and next, and we're curious: what are your very favorite Easter recipes?
Easter is not as big of a food holiday in the USA as it is in other countries, where it often dwarfs Christmas as the predominant holiday on the church calendar. Personally, I adore Easter foods even more than Christmas foods, and I look forward all year to my Eastern European family's recipes for houska, a sweet eggy bread similar to challah, the egg salads, the beet salads, roast lamb with homemade horseradish sauce, and a creamy sweet cheese dessert sometimes called Russian Ice Cream. I put cherries and kirsch in mine!

My mother had these very special rolls that she only made on Christmas, Thanksgiving, and Easter. They're delicious - buttery and light and slightly sweet. They're without a doubt my favorite Easter food.

We are living in Australia right now, and this country just adores hot cross buns at Easter-time. I had a go at making some last night, using a recipe from www.taste.com.au (http://www.taste.com.au/recipes/9616/hot cross buns#comments) with a few tweaks based on what we had, and how I misread the directions (if you try this recipe, take note on the measurements listed in the directions, not just in the ingredient list). Made a separate icing for the crosses, and it was quite nice.

Hot Cross Buns. As chow.baby says, us Aussies are obsessed. They are the quintessential Easter treat, so popular they start appearing in January. Yum!

Easter wouldn't be right without roasted lamb (preferably cooked on a spit) for Orthodox Easter. Also, coloured easter eggs play a huge role as people competatively crack them against another's to see which egg is the strongest. Alas, there are a lot of cracked eggs that then need to be consumed...for like a week.

Wow, I'm kind of surprised there hasn't been any Italians representing yet! We usually have the big antipasti, lasagna, and artichokes that are at every holiday table, but the best part of an Italian Easter? The pies! Pizza gain, salami pie, wheat pie, rice pie, ricotta pie....we eat pie for a week after Easter! My most memorable Easter though, was the one I spent with our cousins in Italy - roasted rabbit was the main dish.
