Ungift Guide 2007: Fudge-Covered Marshmallows

2007_12_17-FudgeMarshmallow.jpgCandy is at the top of the list when it comes to homemade kitchen gifts and our Un-Gift Guide 2007, focusing on gifts from the home and gifts that don't require unnecessary consumption. Marshmallows, however, are one thing that we have never attempted but have meant to try for a long time.

This recipe for Momma Reiner's Chocolate-Covered Marshmallows may change that. These homemade marshmallows are cut big and pillowy, then quickly dipped in a hot pan of fudge. The sugar quotient is off the charts, but isn't that an essential part of the holidays?

Have you ever made marshmallows? If so, do you have any tips, tricks, or recipes?

I'm actively searching for a positively-reviewed vegetarian Marshmallow recipe. Does anyone out there have any leads?

i used Ina Tyler Florence's marshmallow recipe once it was perfect, they were fluffy an delicious and it seemed pretty effortless, but then I tried again and it was disastrous, I have no idea what i did wrong, but two batches in one night had to be scrapped. it was a sad day in my kitchen.

I used the Brownie Points marshmallow recipe with her peppermint oil stir-in last night. I haven't cut them yet, but eating the leftover out of the bowl was pretty dang good.

That is possibly the most convoluted recipe ever, to make the marshmallows you also have to make the fudge and to make the fudge you also have to make the homemade marshmallow creme. Chicken, egg, no it was the chicken right?

I'd like to try these...but is there any alternative to the corn syrup?

I've only had disasterous results when attempting marshmallows. Twice. My mom, though, just made me a batch. Does that mean she was showing off?
