Pizzelles are a pancake-like Italian cookie, baked on a hot iron and similar to the Scandinavian krumcake. The irons are usually made in elaborately lacy patterns that are imprinted on the crisp wafer cookie; in the old days, the Italian pizzelle molds often had the family crest and were passed down through generations.
Pizzelles put in a regular appearance at every large family gathering we've ever been to, and we love that lacy, melting crisp bite. These Chocolate Peppermint Pizzelles from Food Network look scrumptious, especially with the minty chocolate filling.





Pizzelles are some of the easiest cookies in the world to make - and the great part is that you look like an expert baker even if you're not. My favorite is still the anise flavored with ground up seeds but I think I'll try these too this year. A few years ago I wrapped up packs of 6 in cellophane with a pretty ribbon and handed the out to friends. People went nuts. I do have a dedicated iron (even though I'm heartily anti-gadgets) and find that it takes up very little space. But - I'm a die hard pizzelle fan. I'll make them forever.

My grandmother was always the pizzelle maker in our family. She used to bring them to us in these square tin cans, all loaded up with powdered sugar.
Unfortunately, since she has passed away, my mother has managed to lose her recipe!
I'm going to pass the chocolate recipe on to her and see how it goes.
