Do-Ahead Christmas Breakfast

2006_12_22-Breakfast.jpgChristmas breakfast is a wonderful meal, especially if it's done ahead of time! I have good memories of digging into hot cinnamon rolls and strong black coffee as I watched my siblings open gifts. Here's a few more ideas for Christmas breakfast dishes that can be prepared ahead of time and still served piping-hot on Christmas morning.

Deep-Dish Brioche French Toast, from Leite's Culinaria. This French toast can be made the night before and baked in the morning. It's rich, cinnamon-y and gooey-delicious.

Almond croissants, from Chocolate and Zucchini. This recipe uses day-old bakery croissants. They can be filled and glazed ahead, and then popped into the oven in the morning. These are also very rich and sweet, with a crispy sugar-glazed top. My favorite!

 
 

Crockpot Ham and Egg Casserole, from About.com. This sounded scary at first, but after I read it I was intrigued. With good ham, a mix of cheeses, and the fluffiness of slow-cooked eggs it could be really good.

Easy Crepes, from Epicurious. Crepes can be made ahead of time and stored, well-wrapped, in the fridge for a day or the freezer for longer. Set out jam, mascarpone, yogurt, whipped cream, or fresh fruit to roll up in the crepes for a lighter Christmas breakfast.

Any other ideas?

We always take a break from opening presents and do scrambled eggs topped with a family recipe of tomatoes, cheese, jalapeno peppers, mushrooms, and other good things. It's fabulous. We lovingly call it Christmas Goop. It wouldn't be Christmas without it!

Our traditional Christmas morning breakfast is the tamales left over from Christmas Eve. Usually cold, but my gringo husband warms his up.

The ham and egg casserole sounds intriguing, but how do you keep the eggs from being way overcooked in the crockpot? 1 cup of milk to a dozen eggs isn't a whole lot of liquid. 0.o

My family has no sort of Christmas breakfast tradition. However, if I have quiche for Christmas Eve dinner like I'm currently planning, it will almost certainly be my breakfast the following morning! Quiche Lorraine is good at any time of the day.

In our Irish/Scottish family its always scrambled eggs and smoked salmon.
